Choice of Appetizers 
Home-Cured Salmon 
Home-cured norwegian salmon topped with seaweed, white fungus mushroom, pumpkin seeds and sweet soy dressing.
Deconstruct Cullen Skink
Barramundi fish and deep-fried potato skins served in a potato and onion soup. 
Amuse Bouche (Complementary)
Fried Sago puff topped with salted egg yolk cream with a hint of curry flavors. 
Choice of Main 
Slow-cooked local barramundi fish topped with parsley and pistachio crumble and served with citrus reduction and seasonal vegetables. 
Duo of Lamb (Supplementary RM20++)
Pan-seared lamb rump and lamb rosemary crepinette served with burnt aubergine puree and dried longan jus. 
Choice of Desserts 
Apple & Dulce de Leche (Supplementary RM40++)
Apples served with Dulce de Leche and cinnamon ice cream, thyme crumble and raspberry autumn leaf. 
Winter 2018 Signature Texture of Chocolate (Supplementary RM45++)
Ginger and mint sauce, berries “popcorn”, fresh pines, cocoa soil and 196°C liquid nitrogen. A dessert that engages flavor, texture and aroma. 
Many other choices are also available for appetizers, mains and desserts.
