APPETIZERS

Chilled Capellini w/ Echigozaku Nihonshu Sake

To enjoy this dish to the fullest, I was told to take a sip of the customised pairing sake before savouring the pasta. Indeed the flavours came so well together by this simple step. The capellini was mild in taste and the crab meat, salmon roe (ikura) and flying fish roe (tobbiko) complemented the dish very well by bringing different textures and flavours.

Grilled Tiger Prawn w/ Misha Lyric – Riesling (NZ 2012)

Huge tiger prawns grilled to a stunning bright red colour, served with burnt lemon on the side. A type of cereal, Nestum, was added to the dish which brings back childhood nostalgia. The shell of prawns were peeled which gain brownie points from me as I could just dig in right away. The flavour of this dish was spot on and was made even better with the pairing white wine.
MAINS

Roasted Half Young Chicken w/ Dogajolo Toscano Rosso IGT (Australia 2016)

A smaller chicken was used in this dish which promises tenderness. Brined in a brining solution for 12 hours, followed by sous vide cooking to lock in the juices. Served with french fries and creamed bok choy. The chicken was well brined. French fries on the side was amazingly crispy and salted.

Char-Grilled Dukkah Spice Lamb Ribs w/ Corona De Aragon Reserva Especial (Spain)

Accompanied by grilled pita bread, homemade yoghurt and shredded green apple. The lamb ribs was slightly fatty, which was suggested to pair with pita bread, yoghurt and apple to reduce the greasiness. Despite that, flavour was spot on and meat was marinated and cooked to perfection.

DESSERTS

#1 Strawberry Lychee Mousse
Strawberry jelly, crepes skin, layered strawberry, lychee mousse too sweet (white choc & strawberry jelly which hardens up into a thick lump) for my liking, also the acidity from berries helped in balancing the sweetness. The consistency could be smoother for a better mouthfeel.

#2 Peanut Butter Mascarpone
At first glance, it looked like a tiramisu to me. Chocolate coffee cake topped with a mixture of peanut butter, mascarpone cheese and milk chocolate. The combination was surprisingly good.
